Cookies n' Cream chocolate log cake/slice

This is more of a dessert than cake!
This cake like texture dessert is so easy to make and very very tasty. It would make an excellent alternative to the yule log.
This is an Australian recipe and we use Arnotts chocolate ripple biscuits/cookies. I have a picture of this in my gallery

Cookies n’ Cream chocolate log cake/slice

Ingredients

  • 1 x 250g packet of chocolate cookies( approx 20-30 cookies)
  • 2 & 1/2 cups heavy cream
  • 1/4 cup confectioners sugar
  • 1/2 teaspoon vanilla

Instructions

  1. Place cream, sugar and vanilla in a bowl and whip until very stiff. Join biscuits together using a generous layer of cream between each biscuit. Continue until it looks like a log. Cover entire log with remaining cream and put grated chocolate on the top. Refridgerate for at least 8 hours, best left for 24 hours to get a cake like texture. Cut on an angle and serve.

My mother made this in the 50's. It was called "ice box cake". She alternated tinted whipped cream filling in pale green, pink, & white, & covered it all with white. It made ribbons of colors when sliced. I thought it was beautiful and yummy.
