Coconut Cake

I found this recipe in a Betty Crocker Recipe Magazine and tweaked it a little. I swear by Duncan Hines. I think it has the most flavor and it’s really moist. AND I add pudding into every mix to make it even more moist. I hope you enjoy it as much as my family does.

Ingredients

  • 1 box of Duncan Hines White cake mix
  • 1 box of White chocolate pudding
  • 1 can (14 oz) Coconut Milk (NOT cream of coconut)
  • 1/4 cup water
  • 3 egg whites
  • 1/2 cup of Large Coconut Flakes

Instructions

  1. Preheat over to 350 degrees.

Mix dry cake mix and pudding in a large mixing bowl. It helps to break up the large pieces making for a smoother cake. Then add in milk, water, and whites. Mix for 2 minutes until all lumps are gone, then stir in coconut flakes.

Bake 28 to 33 minutes.

OMG. I'm so excited you posted this. I've been looking for a coconut cake recipe using a cake mix for weeks now. Most of them tell you to do the 'poked hole' method and I didn't want to do that. I'll be using this for sure! Thank you!!!!!

I use a white chocolate buttercream or even a regular BC. I'm in the process of making an Almond Joy Cake. Same cake but a layer of chocolate BC and a thin layer of slivered almonds in the middle and frosted with the chocolate BC.

great cake! I am using the "ultimate pina colada" filling for this cake so i'll definitely let you know how well it comes out :)

Oh thank you so much for posting this. I made a coconut cake for a customer last weekend. I do one for her every single year and never had a problem. She just called me and said she hated to tell me and the cake tasted so good, but when they cut into it, it just crumbled and was just a mess. I was so embarassed. I offered her another cake at no charge and now I'm just scared to death to make the same cake since it failed, so I was looking for a recipe and seen yours. I seen where you said it sets like a pound cake, so that tells me it should cut smooth and not crumble, so I'm gonna give it a try tonight. You may have just saved me a customer. I love making this cake,but instead of using the white chocolate pudding,I use coconut cream pudding and don't even need to add flakes....delish!

Best coconut cake EVER! Wonderful flavor and incredibly moist! It does set very nicely, it baked so evenly I barely had to level it. Boo for me cuz there were no scraps to munch on!! I filled it with the delicious coconut filling and it was a big hit.

Made cupcakes of this recipe last night as a trial for an order in October. OMG!!! So amazing. I loved it! Can't wait to share my cupcakes today and see what others think. Definitely found a new favorite cake. Baked so nice and was perfect for cupcakes too!!

Just heard from the client that I made this cake for and she said it was a BIG hit with her family. I also used coconut cream pudding in the batter instead of coconut flakes. Thanks for sharing............

This cake is soooo good!!!! I made this for a bride who loves coconut. I did make a couple of changes. I used Coconut Cream pudding, I used unsweetened coconut that I toasted, and I increased the water to 1/2 cup. The batter was a little to thick for my liking. It baked so nicely!!! I'm not a big fan of coconut but I loved this cake. The only flaw I found with it is that mine turned out a little too dense almost doughy.cake tester came out clean don't know what I did wrong,but i'm going to keep on trying because it is that good! I filled mine with a whipped mango and pineapple filling and then frosted it with a whipped cream frosting,very yummy!

Made this over the weekend for a dear friends Betty Boop cake and it was a big hit with everyone. I do not like coconut so I can not say personally but everyone else ate it all up. I made a simple coconut buttercream icing for it due to the Betty Boop request. Everything turned out perfect. The icing was done with a little over a 1/2 tsp of vanilla and a little less than 1/2 tsp of coconut flavoring.

Help! I just made this recipe for a wedding cake and it doesn"t taste like coconut at all. Just tastes like white cake. I used white cake mix, cocnut cream pudding mix, coconut milk and everything else as is called for in the recipe. Is it a very subtle coconut flavor? Anyone else have this problem? What am I doing wrong?

I love this cake! I've made it a few times now and it's one of everyone's favorites. I've made it with a coconut pecan filling (like german chocolate cake) with a ganache outer coating. Also, I've made it with a pineapple filing and coconut flavored BC. I substitute coconut cream pudding, but otherwise use the same ingredients. The coconut is fairly subtle, but pops when you put it with other things. High quality ingredients make a difference too.

Made this recipe today, cupcakes and cake, the cupcakes came out very nice, but the cake was too moist almost doughy. Like asya stated, the cake tester came out clean but the inside too doughy. Does anyone have any tips on how to make it less doughy. The coconut flavor is not as strong as I would like.
