Coconut Cake

I love Coconut cake and after I try and try different recipies I got my own and I love it, It is really tasty, My favorite.

Coconut Cake

Ingredients

  • 2 sticks butter (1 cup)
  • 4 Eggs
  • 1 1/2 cups of sugar
  • 2 1/2 cups cake flour
  • 3 tsp. baking powder
  • 1 teaspoon of salt
  • 3/4 coconut milk
  • 1/4 coconut cream*
  • 1 teaspoon vanilla
  • 3 teaspoon coconut extract
  • 1/4 teaspoon lemon juice

Instructions

  1. Preheat oven 325 F, and grease 2 8″ round cake pans, set aside.
  2. Cream the butter about 3 min. add sugar little by little ’till it is really nice and smooth, Add the egg yolks one by one and keep mixing for about 3 more min. Add the extracts. Add the flour alternating with the coconut milk and coconut cream starting with the flour and finishing with the flour, On a separate bowl beat the egg whites until soft pick and mix the coconut batter with the egg whites by hand.
  3. Pour the batter in to the cake pans and bake for about 45 to 50 min. or until the knife or tooth pick comes out ALMOST CLEAN,

You get coconut cream in a tin, you can get coconut milk and coconut cream which is thicker, it's made from the flesh of the coconut, about the thickness and texture of thin pouring cream but coconut flavoured. High in fat. HTH.

the 3/4 cocnut milk and the 1/4 coconut cream what is the measurement I just made this cake and it didnt come out right so I know it was something that I did wrong maybe it's the measurements but would like to try again Thanks

I forgot the lemon juice! at what point was I supposed to add it? cakes are in the oven as I type, I hope it comes out ok :(

I made this cake for my step father's birthday. It tasted great. I paired it with a coconut cream filling and I altered my usual buttercream to be coconut flavor. I was not able to find coconut cream, so I put my coconut milk can in the fridge for a couple of hours without shaking it up. When I opened it, the cream part had floated to the top. I scooped off that part and used it for the coconut cream (1/4 cup) and then shook up the rest of the milk and used 3/4 cup. My cake was done after only 35 minutes. The instructions above are not very good. I combined all of the dry ingredients with a wisk. I added the lemon juice at the same time as the extracts since it was such a small amount. Also, this recipe is listed under white cakes, but it is NOT a white cake. The egg yolks make the cake a light yellow color. It worked out fine for me, because I didn't need a white color. I gave this recipe 9 stars because it tasted really good, but the instructions are not so good, as she neglects to tell you when to add all of the ingredients and the cooking time was too long.

I forgot to mention above that my cake had a fairly dense consistency. It was between a pound cake and regular cake consistency.

I'm making this cake this morning. Just thought you might like to know where I found coconut milk. After checking the cake aisle, the mixed drink aisle, and the juice aisle in three different stores, I found it by accident in the oriental/Asian section under two different brands.

This is a fabulous recipe. The batter is delish as is the cake! I love it because it is truly coconut not just a white cake with coconut filling. It can stand by itself with just frosting. Thanks Frankyola!

Great cake! A customer loved it for her wedding. She wanted coconut flavored cake without the coconut shavings and this was perfect! Paired it with pineapple filling, yummy.

I did this cake again yesterday and honestly, I couldn't stay out of the batter or the scraps after it was cooked. I don't even like coconut that much but I could eat this cake all day. Paired it with a tangy lemon curd this time. So goood!!

This cake is AWESOME! I so craved Pina Colidas while it was cooking. My husband doesn't get to eat my cake very often because I sell them, but his one he got a piece of and the words he used to describe it was EUPHORIC and ETHEREAL. I found the Coconut Milk in the ASIAN section of my grocery store.
