Coca-Cola Cake

I got this recipe from a chocolate class in a culinary program at a local JC years ago. I'm not sure where it originally came from but it's been a family favorite for many years. I'm not sure how well it would translate to a layer cake for decorating. If that's what you need, then I wouldn't use the marshmallows on top. (It makes it gooey & bumpy). I've only done it in a 9x13 pan I usually use Pepsi because I'm Pepsi loyal.

Ingredients

  • Cake 2 cups sugar 2 cups flour ½ cup vegetable oil 3 tablespoons cocoa 1 stick (1/2 cup) unsalted butter 1 cup Coke Classic ½ cup buttermilk 1 teaspoon baking soda 1 teaspoon pure vanilla 2 eggs 1 ½ cups miniature marshmallows Coke Icing 1-pound box powdered sugar 1 stick (1/2 cup unsalted butter) 2 tablespoons cocoa 1/3 cup Coke Classic 1 teaspoon pure vanilla extract ½ cup chopped nuts, optional

Instructions

For Cake: Grease and flour a 9x13 baking pan. Set oven rack in center of oven and preheat to 350. Mix sugar and flour in a mixing bowl. In a saucepan, heat oil, cocoa, butter, and Coke, stirring to dissolve mixture; then bring to a boil. Remove from heat and pour hot mixture over dry ingredients. Beat well. Add remaining ingredients and beat well again. Marshmallows will not dissolve, and batter will be rather thin. Pour into a prepared pan and bake 30-35 minutes. Dont worry if cake bakes unevenly. Frost while warm. For icing: Place sugar in a bowl. In a saucepan, bring butter, cocoa and Coke to a boil. Pour butter mixture over sugar and beat in vanilla and nuts. Spread immediately on warm cake.
