Choco Coffee Muffin
Ingredients
- Cake Flour – 166 grams
- Sugar – 210 grams
- Cocoa Powder – 36 grams
- Baking soda – 4 grams
- Baking powder – 1 gram
- Salt – 2 grams
- 1 large egg
- Canola oil, soya oil or coconut oil – 47 grams
- Evaporated milk – 210 grams
- Vanilla – 4 grams
- Black Coffee, cooled – 15 – 17 grams
Instructions
- 1. Preheat oven to 340ºF. prepare the muffin baking cups lined with cupcake papers.
- 2. Whisk together, eggs, vanilla, oil and black coffee.
- 3. Add in sugar, cocoa powder, salt, baking soda and baking powder.
- 4. Add in flour and milk alternately.
- 5. Pour the batter into prepared baking cups, pour batter at about 3/4 full.
- 6. Bake for 23 – 25 minutes.
- Note:
- You can also try this baked as round cake and iced with rich creamy chocolate fudge frosting.
