Choco Coffee Muffin

Ingredients

  • Cake Flour – 166 grams
  • Sugar – 210 grams
  • Cocoa Powder – 36 grams
  • Baking soda – 4 grams
  • Baking powder – 1 gram
  • Salt – 2 grams
  • 1 large egg
  • Canola oil, soya oil or coconut oil – 47 grams
  • Evaporated milk – 210 grams
  • Vanilla – 4 grams
  • Black Coffee, cooled – 15 – 17 grams

Instructions

  1. 1. Preheat oven to 340ºF. prepare the muffin baking cups lined with cupcake papers.
  2. 2. Whisk together, eggs, vanilla, oil and black coffee.
  3. 3. Add in sugar, cocoa powder, salt, baking soda and baking powder.
  4. 4. Add in flour and milk alternately.
  5. 5. Pour the batter into prepared baking cups, pour batter at about 3/4 full.
  6. 6. Bake for 23 – 25 minutes.

  8. You can also try this baked as round cake and iced with rich creamy chocolate fudge frosting.
