Chewy Chocolate Chip Cookie

I have searched and search for the perfect cake type chocolate chip cookie recipe. This one works fantastic and can be used to do large pan cookies or deep cookies such as in a cake pan. I have used it in a 3" deep cake pan for a grooms cake.Chewy Chocolate Chip Cookie
Ingredients
- 3-1/4 A/P Flour 1 Cup Cake Flour 1 Tsp. Baking Powder 1 Tsp. Baking Soda 1-1/2 Cup Butter Flavored Shortening 1-1/4 Cup Brown Sugar 1-1/4 Cup Granulated Sugar 2 Eggs 1 Tsp. Vanilla 12 oz. Chocolate Chips
Instructions
- Cream sugars and shortening. Add eggs and vanilla and continue mixing with sugar mixture. Sift flour(s), baking powder and baking soda in separate mixing bowl. Gradually combine flour mixture to sugar mixture. Add in chocolate chips to mixture. Do not overmix. Bake cookies at 375, 8-10 minutes depending on the size of your cookie. Baking in a deep cake pan will take substantially longer, up to 50 minutes. Allow to cool on rack.
- **Note: If you are baking in a deep cake pan, line bottom of pan with parchment circle, start baking at 375 for approx. 20 minutes then lower to 300 until baking is complete. To check for doneness, insert small toothpick which should come out somewhat clean keeping in mind that the chocolate will of course come out melted on the toothpick. However, the cookie batter portion will resemble a moist crumb when done. Allow to cool in pan before removing. Likely somewhat fattening but quite yummy.
