Banana Loaf Cake

I absoutley love Banana Cake, its been a favorate of mine since i was a child. This sweet loaf cake is brilliant served warm with a hot cup of coffee

Ingredients

Amount Ingredient 4oz soft butter or margarine 6oz sugar, of your choice brown, granulated 8oz self raising flour 2 large eggs 3 ripe bananas

Directions

Methods:
■Heat the oven to gas mark 4; 180C
■Grease a 2lb loaf tin.
■Mash the bananas with a sturdy fork.
■Cream the butter and sugar together and mix in the eggs
■Mix together the two yellow sludges you now have.
■Mix in the flour.
■Scrape into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for a further 30 minutes.
To add a Honey Glaze:
Warm up 3tbs of honey in a saucepan, prick the cooked banana cake with a metal skewer and pour over the warm honey. Leave to cool and remove from the tin, ready to slice and serve yummy

I live in Mexico and cannot find "self rising flour". I see this listed in quite a few ingredients lists. What do I use instead? Is there a standard conversion that breaks this down into regular flour and baking soda/powder, or whatever?

The whole family LOVED it. Approved and asked for more...lasted 1 1/2 day only, that's because I hided 1. ;) Didn't used the honey glazed thou and used 4oz oz light brown sugar & 2 oz of regular granulated sugar. Deliciousssss.....

to desfox13, If you don't like salt, you can leave it out, just up the baking powder a bit (I would probably add 2 teaspoons baking powder to 1 cup flour). An alternative method is to add one teaspoon of cream of tartar and half a teaspoon of bicarbonate of soda to one cup of plain flour - this gives the same result.
