I found this recipe for Banana icing when searching for a recipe to use some banana's that got dark on me before we could eat them. Now I think I'll be happy to see the get old, this is a fantastic great tasting icing. It can be used on a banana cake, white cake or even a peanut butter cake, yum! Enjoy!

Banana Icing

Ingredients

  • 1/4 cup softened butter 1/2 cup mashed bananas 1/2 teaspoon lemon juice 1/2 teaspoo vanilla extract 3 1/4 cups confectioners sugar

Instructions

Cream together butter, bananas, lemon juice and vanilla. Slowly beat in confectioners sugar, adding more if needed to make a nice fluffy, spreadable icing.

Tried it on a chocolate cake with strawberry filling. Sprinkled some Crushed nuts on top. The customer loved it. I've now added it to my gormet cupcake list. Banana split cupcakes!! If you like you can also add some pineapple ice cream topping.

So I just made this icing today, and my icing is not "fluffy" at all. :( It's more like thick glue. It's not a total disaster since I plan on using this as a filling ,but any thoughts as to what I did wrong? I mashed the bananas super well... until they were pretty much liquid. Did I mash them up too much? Maybe I beat it too fast while adding the powdered sugar?
