Apple Cake with Cream Cheese Frosting

This cake was passed down to me by my Godmother. I always looked forward to making it every fall and it remains one of my favorites. May be done up a day or two before you need it. An alternative to the Cream Cheese frosting is to sift powdered sugar on the top.

INGREDIENTS

2 lg. eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4. tsp nutmeg (I use cinnamon since I don’t like nutmeg)
4 c. peeled, diced apples (Northern Spy the best or Granny Smith or McIntosh)
1 c. chopped walnuts (I toast mine first @ 300º for approx. 8-10 min)

Cream Cheese Frosting:
1 (3 oz.) pkg. cream cheese, room temp.
3 TB butter or margarine, softened
pinch of salt
1/2 tsp. vanilla
1  1/2  c powdered sugar

DIRECTIONS

Beat eggs until light and fluffy.
Gradually add sugar, oil and vanilla.
Sift together in separate bowl the flour, salt, bkg. soda, cinnamon and nutmeg; add to first mixture.  Stir in apples and nuts. (NOTE:  if mixture is too heavy for your mixer, use your hands to finish mixing)
Put batter in a greased 9″ x 13″ pan and bake at 350º for 45 min.
Let cool in pan, then spread with Cream Cheese Frosting or sift powdered sugar on top.

Cream Cheese Frosting:
Mix all ingredients together until smooth.

Sounds delicious! By any chance is your Godmother from the South? This recipe sounds just like my Granndmother's (Memaw) Apple Pound Cake from South Carolina. It is not a pound cake at all - named for when people would relay the recipe verbally - pound of this, pound of that, etc.

Superwawa, she wasn't from the South but from MI. Her mother though, was 100% German as was her father.

I made these today..... I half the recipe and it made 12 cupcakes. 3/4 of the way through I thought I had made a mistake because the batter was so thick it was like crumble but once I added the apples it magically all came together. These are by far the BEST apple cupcakes that I have ever tasted.......Thanks so much for sharing!!!!!!!

Can anyone tell me if once it is baked if there are any apple bits in it? Customer wants an apple cake but not be able to see or feel the apple in it? Make sense??? Any help would be super!!!!! Thanks

Cake was delicious! I would not use the frosting, that would be too much. I would also use less sugar, but still it was great!

This recipe was a huge hit! I made these as cupcakes with caramel added to the cream cheese frosting for my Aunt's 60th bday party and the family raved. My husband (who could care less about sweets) had 2! Thanks!

I made this for Thanksgiving and it was pretty good. I think next time I will cut back on the apples, there were soooo many in there, it was too much. Over all though good recipe and I will make it again!

I made this cake last night. It is fantastic! We ate it without and frosting, it tasted perfect by itself.However, it didn't rise very much, is that normal for this recipe?
