American Frosting makes a light, fluffy yet crisp topping, its soft white contrasting chocolate caraque.
American Frosting
Ingredients
- 1 egg white
- 2 tbsp water
- 1 tbsp light corn syrup
- 1 tsp cream of tartar
- 1 cup icing (confectioners) sugar, sifted
Instructions
- Place the egg white, water, light corn syrup, and cream of tartar in a heatproof bowl. Whisk together until thoroughly blended.
- Stir in the icing (confectioners) sugar into the mixtire and place the bowl over a saucepan of simmering water. Whisk until th mixture becomes thick and white.
- Remove the bowl from the saucepan and continue to whisk the frosting until cool and thick, and the mixture stands up in soft peaks.
- Use immediately to fill or cover cakes.
